Healthy Homemade Chocolate

Chocoholics rejoice, I have a great chocolate alternative for you that excludes all of the bad fats and refined sugars we're trying to avoid.

If you have a sweet tooth like me, finding a healthy chocolate treat can be a real chore. Thankfully I have the perfect solution with these raw chocolate flavoured snacks.

Filled with protein, energy and packed with nutrients, the hardest part is waiting for them to freeze before eating them.

Preparation Time: 5 Minutes

Serving: 20 - 30

Ingredients:

  • 130g Almonds

  • 75g Cashews

  • 250g Pitted Dates

  • 50g Desiccated Coconut

  • 25g Cacao

  • 1/4 Tsp Sea Salt

  • 60g Raw Coconut Oil

Method:

  • Place grease proof paper on a baking tray

  • Place all of the nuts in a blender and grind down until they look like breadcrumbs, set aside

  • Add dates, coconut, cacao and salt to the blender and chop until the mixture is smooth

  • Return the nut mix to the bowl, adding the coconut oil and blender until the contents is fully mixed and has a shiny appearance

  • Empty the mixture onto the baking tray and press down firmly with the back of a spoon. The mixture should be approximately 1 cm thick

  • Use a variety of different chopped nuts and fruit to decorate such as goji berries, chopped almonds and coconut

  • Place in the freezer until the chocolate mixture is hard, approximately half an hour. This is the tough part, waiting…..

  • When the raw chocolate is solid, remove from the baking tray and cut or break into squares

  • Chocolate can be stored in the fridge or freezer. My personal preference is the freezer as it has a lovely crunchy texture when eating
